The group seal is a rubber ring that is positioned in a coffee machine's group head around the shower plate. The lip of the filter basket is designed to meet the group seal to become airtight. This ensures that all of the water is directed to the coffee grounds.
This may look like a tiny, insignificant part, but an old or missing group seal can have disastrous consequences. If this seal is not airtight, water will leak over the side of the portafilter and into the drip tray. The result of this is that less water is pushed through the coffee beans at the desired pressure and can seriously affect the quality of your coffee brew.
Group Seal Maintenance
Group seals maintenance is an essential aspect of espresso machine upkeep to ensure the optimal functioning of your espresso machine. Barista Warehouse recommends that you change group seals every 3-6 months to ensure the efficient running of your coffee machine and the best possible coffee brew.
New group seals are soft, full of natural elasticity. Old group seals lose this elasticity and can become caked with coffee oils and residues, and hence their ability to do their job properly.
Pro tip: some group seals on commercial machines such as Gaggia or Costa have one flat edge and one with a slight ridge. The flat edge should always be placed facing downwards, in contact with the portafilter or filter holder.
