Bruer introduced their first Cold brew device, the Cold Bruer, via Kickstarter in 2013. From then until now, they have been twenty iterations of the original device, each of the changes, whether large or small, all representing significant improvements on the original design. Changes like the inclusion of calibration-markings on the coffee and water chambers to make measurement easier even without a scale or measuring cup. Later iterations also saw the removal of the handle to reduce the overall size of the device. Bruer also implemented a snap-together two-piece lid to best serve the dual purpose of providing an airtight seal on the carafe and a good fit on the tower. Bruer also increased the wall thickness of the glass. The Cold Bruer device was conceptualized as a slow-drip cold coffee brewer specifically for the home user. As such, Bruer designed the device to be very easy-to-use, compact and long-lasting. It does not require electricity and is small enough to be portable.
Consumers have come to realize that cold-brewed coffee offers several advantages over traditional hot brews. Hot water extracts oily compounds from coffee that are highly acidic and bitter. Brewing coffee with cold water reduces the presence of these compounds and thus reduces acidity and bitterness. This results in a more balanced cup with noticeably more natural sweetness. Cold brewed coffee tends to have a smoother ‘texture’ and full aromatic finish when compared to its hot counterpart. For these reasons, cold-brewed coffee is arguably better for the digestive system, especially for consumers who suffer from acid reflux or heartburn.
